Are any of the works not produced by Nasu considered canon?

Specifically:

Fate zero
The manga and anime of Tsukihime
the KnK films
Melty Blood manga

Stuff like that.

Yes. I'm pretty sure Fate/Zero is canon and that the KnK films are canon as well since they are based on the novels. Nasu was/is involved, I'm sure, in the production of Fate/Zero and the KnK films. The anime of Tsukihime probably got his go ahead for them to make it but you can tell just by looking at it that it didn't have much, if any, input from him. I've not seen the Tsukihime manga nor the Melty Blood manga so I can't say about those.

The first and third are canon... the others... not too sure. I'm sure lots of people would argue that the second 'most certainly is not canon'.
Melty Blood manga bears little resemblance to the game, apart from the characters...

100% canon, even though nasu's participation is only 80% or so.

not sure, but it most likely isn't.

What about the Tsukihime manga? That exists.

the tsukihime manga is canon. even more so compared to the non-existent tsukihime anime. the melty blood manga isn't so canon, but it does have its good points. i'd rate its canonity at about 70%.
Whenever I go on, everyone leaves the Tsukihime forums. 'Cause I just fail like that.

canon means that it's faithful to the intentions of the original producers and can be used as evidence for/against arguments. non-canon is the opposite. so obviously things that the original producers participated in are canon; doujinshi are not.

tecnically... type moon universe have many dimensions so...
evrything can be happening in a different dimension and that would make everything not canon..
correct me if i am wrong i am not sure :S

Perhaps, but you can think of the routes shown in the games or the books as the 'events that had the best probability of happening'
So all other events are so improbable they are not canon
